Quality
Our extra virgin olive oil is harvested from century-old trees following the traditional hand-picking technique, giving each olive the attention it deserves, while also incorporating modern techniques.
This includes an earlier harvest period and the use of state-of-the-art milling machinery. While this approach results in a lower yield, it produces an outstanding, high-quality product.
The slow cold pressing and the young, still-green olives yield an oil with superior organoleptic qualities, a bold flavor that is slightly peppery yet also delicate and fragrant.
